Random Thoughts about Creepy Clowns, Witches, Toads and Other Creatures

I love running through my neighborhood this time of year because of all the Halloween decorations.  Even though the weather has still been sticky and muggy, the Halloween decorations take my mind off the chore of running in such terrible weather.  I enjoy looking at all the glowing pumpkins, orange lights and inflatable Halloween characters.  And as I run past all the fun and spooky delights, I find myself singing the song from The Nightmare Before Christmas. This is Halloween.  This is Halloween.  Halloweeen!  Halloween!  Halloween!  Halloween!

Running during the wee early morning hours of Halloween Town could explain all strange creatures crossing my path.  The full moon hasn’t helped ease my fears, except that its illumination is so bright that there’s no need to use my flashlight.  With the full moon, there’s also been a strange low lying fog.  I’m expecting werewolves to jump out at me.

I’ve come to believe there’s a witch living in my neighborhood.  Oh wait.  That’s me. LOL  I kid. I kid. No, I mean a pointed hat, broom riding kind of witch with her double, double, toil and trouble spells because there have been a ridiculous number of toads hopping around in the streets.  I think she’s flying around turning people into toads.

And that witch is also dropping snakes all over the place as she’s flying around casting spells because you would not believe how many dead, squashed snakes I’ve seen in the past week.  It’s crazy!

And I can’t forget to mention the spiders!  Those crazy arachnids were scurrying in front of Tracey and me last week during our mid-week run and each one would get increasingly larger as it ran out in front of us.  I think they were running from the witch and her cauldron.

Oh and there was a black cat as well who darted in front of me on my run back home the other day.  I think he fell off the witch’s broom.

Then, this morning I ran through a spider web which caused me to scream and jump into convulsions and a spontaneous dance like I had been possessed by the devil.  It still gives me the eevie jeevies just thinking about it.

But there is one creature of night that I can’t handle crossing my path and it seems clowns are haunting me from every direction, from the storm drains to the mailboxes. One neighbor felt a clown mask on their mailbox would make a wonderfully evil addition to their Halloween décor.  Every time I ran past or even drove past this house, I would go into a panic.  I can handle fake bats and spiders, skeletons and decapitated heads.  But when you stick a clown in your yard, you’ve crossed the line.

This horrible, evil clown was located at the beginning of my housing section so there was no way to avoid “It”.  Those beady eyes and fangs followed me as I ran past It.  It had got to go!  I had to take action!

One dark early morning, I planned “Operation: Stuff It in the Mailbox”.  But It wouldn’t fit in the mailbox.  It’s fat, hard silicone head wouldn’t budge.  I panicked, so I put it back on the post but faced it towards the house.  A sense of victory came over me.  But as I sprinted off, I couldn’t get the sensation of It’s red curly hair and rubbery face off my fingers.  Deep cleansing breaths seemed to help.

Since It’s repositioning, the owners decided to take It down.  Thank God.  Now, I don’t have to worry about evil clowns eating me and I can go on with my regular training schedule.

As long as a witch doesn’t turn me into a toad.

But then, maybe the witch has already turned me into a toad because my running is “toadally hopping” lately! HA ! HA!

Things are going great since I incorporated strength training into my training schedule and my runs are improving tremendously!  I feel stronger too.  I attempted 15 miles again since my last attempt wasn’t very good and I shaved 27 MINUTES off my time!   This morning, I shaved 4 minutes off my 4 mile time from last week!  AMAZING!  Here’s a week’s worth of distances and times.  You be the judge.

Calling All The Monsters! It’s Almost Halloween! Get Ur Freak On!

China Anne McClain of Disney’s A.N.T. Farm released a treat just in time for Halloween and my girls love it.  The choreography reminds me of Michael Jackson’s Thriller.

Halloween is only two weeks away!  I CAN’T WAIT!

My Glee Cheerio cheerleader costume arrived and it fits perfectly and no muffin top was visible.  Thank goodness! Allana will approve.  However, other parts may be visible, so I’ll need to wear a pair of running shorts underneath my skirt.

I have to admit, I will look so cute running in the Frakenfooter half marathon as a Cheerio cheerleader.  I think I’ll also wear it trick-or-treating with the kids this year.  Fun!

My friend, Chrissy is hosting the adult Halloween party this weekend, which should be a devilishly good time as always.  I am so ready to get my drink freak on!

I haven’t officially unveiled our couple costume for the adult party on the blog yet, but I am dying to spill the beans.  It’s a good one.  All will be revealed for next week’s Music Monday when I post pictures from the adult party.

Baked Penne with Chicken Sausage and Broiled Eggplant

PhotobucketI judge my life by ways of moan and groans from my children.  If I prepare a dinner that produces very little complaining, then it’s a winner and one to add to the menu rotation.  When I serve Baked Penne with Chicken Sausage and Broiled Eggplant, there is very little belly aching from my children and that makes for a pleasant dinner in more ways than one.

Since this pasta casserole is large enough to feed an army, it feeds my family for days.  I actually freeze small portions of it to have for lunch or dinner in a pinch.  Frozen leftovers reheat beautifully and taste just as good the second (or third) time around.

I stumbled upon this recipe in a William-Sonoma cookbook, Classic Pasta at Home, however, I’ve modified and…eh hemperfected the recipe to our liking.   For example, I added my own tomato sauce recipe, but with dried oregano, doubled the amount and left some sauce to the side because my family likes extra sauce served on top.

I omitted the step to salt the eggplant, because when using a fresh eggplant, there’s no need to salt it to pull out the moisture.  (When selecting an eggplant, choose one that is dark purple and heavy.  It should feel slightly firm and with a soft, spongy give and should spring back when pressed. Too spongy means the eggplant is old.)  Plus, I baked the eggplant for 10 minutes on each side and then finished the eggplant off by broiling the slices for about 5 minutes for a beautiful golden brown color.

I also added part-skim ricotta and added part-skim mozzarella to the ingredients.

Like, I said, pasta perfection.
 
Baked Penne with Chicken Sausage and Broiled Eggplant

Ingredients

1 eggplant, sliced into ½ inch round slices

1 ½ tsp salt

3 Tbsp olive oil

1 chopped yellow onion

8 cloves minced garlic

2 cartons of Pomi chopped tomatoes

4 tsp dried oregano

½ tsp crushed red pepper

½ tsp ground black pepper

1 lb mild Italian chicken sausage, casings removed and broken into crumbles

1 lb. dried penne

8 oz of part-skim ricotta cheese

½ cup shredded mozzarella cheese

¼ cup grated parmesan cheese
 
Directions

Preheat oven to 400˚.

Arrange eggplant slices on an oiled cookie sheet.  Brush each side with olive oil and sprinkle with salt.  Bake in oven for 10 minutes on each side to soften the eggplant.  Then, broil the eggplant for 5 minutes to produce a golden brown color.  Remove eggplant from cookie sheet and lay each slice on a dish covered with paper towel to cool and drain excess olive oil.

In a large sauté pan on a medium to low setting, heat 1 Tbsp olive oil.   Add onions and sauté’ until translucent.  Add garlic and sauté for a few minutes to soften the garlic.  Add tomatoes, oregano, 1 tsp salt, red pepper flakes and black pepper.  Bring to a simmer, about 5 minutes.  Taste and adjust accordingly.  Then, remove half the sauce from the pan and set to the side to be served with casserole.

Add sausage to remaining sauce.  Stir the sausage crumbles into sauce while breaking the crumbles into smaller pieces.  Simmer and occasionally stir for another 10 minutes or until sauce thickens.

Bring a large pot of salted water to a boil on a high heat.  Add penne, stir well and cook for 6 minutes.  Drain and return to pot.  Add sauce with sausage and ricotta and toss.

In a 9×11 oven-safe baking dish, make a layer of pasta using half the pasta.  Top with eggplant.  Add another layer of pasta and another layer of eggplant.  Sprinkle with mozzarella and parmesan.

Bake for 20 minutes or until cheese is slightly golden brown.  Remove from oven and let stand for 5 minutes.

Slice and serve each piece with tomato sauce drizzled over top.

Walking the Walk and Saving My Own Ta-Tas

Turning 40 this year was more than a milestone.  It meant I would qualify for annual mammograms.  Now, I would have to take action to save my own ta-tas with a baseline mammogram.

As protocol, I was told not to wear deodorant or lotions for my mammogram, but I didn’t know what to wear.  What clothes do women wear for a mammogram? Should I wear something pink?  Thank goodness I tweeted my questions, because I learned a two piece outfit (t-shirt and shorts) would be best unless I wanted to bare more than my breasts.

Fortunately, my OB office offers mammograms on site.  If I haven’t said it before, I’ll say it now.  I love my OB office, Partners in OB.  All the labs and screenings are done on site.  The staff and the doctors are simply wonderful and my technicians, Linda and Isabella, are no exception.  (Isabella was a fabulous babysitter and photographer too.)

Despite all the horror stories I’ve heard about boobies being flattened like pancakes, it didn’t hurt at all, but then that could be one benefit of itty bitty titties. Linda, the technician, eased my nervousness and explained the whys and hows of the images.  She said everything looked good, but my doctor would review the images and more may be needed, but not to worry.

And for being such an excellent patient screened during October, I was rewarded with a pink ribbon pin and a pen.

A few days before my mammogram, I read some staggering statistics.  One woman dies every 74 seconds from breast cancer.  For my children and my husband, I refuse to be that woman.

Breast cancer awareness means more than wearing ribbons and pink outfits.  It means more than running a 10K race.  It means I need to walk the walk and put my money where my milkies are put my breasts on a shelf because even tiny ta-tas need squishing saving.

Because I am the cure.

A Not-So-Playful Time in the Pumpkin Patch

Yesterday, Little Lion Man and I visited the Harvester United Methodist Church for their annual Playtime in the Patch event.  I was so excited to bring LLM to the pumpkin patch, because the when the girls were little, they enjoyed it immensely.  They loved seeing and touching all the different colors, shapes and sizes and picking one to bring home.

I assumed LLM would love pumpkins too.  After all, the mini pumpkins resemble balls he can throw and he’s all about throwing things these days.

However, he wasn’t quite as enamored as I had hoped.  He enjoyed the Dum Dum lollipops though.

And tugging on the tent rope was fun until he spotted the road and thought that would be more fun to run through than the pumpkin patch.

Every day I am reminded that boys are so different from girls.

He’s My Boogieman

Like I warned you last week, once October rolls around, I dust off the spiny tingling Halloween tunes and start busting my Thriller moves.

Little Liam Man has been working on his new spooky look as well.  Thanks to allergy season, my Little Lion Man has been transformed into my little Boogieman.

Actually, KC and the Sunshine Band is too clean-cut and sunshiny to portray the true goriness of my little Boogieman.  On the other hand, White Zombie best expresses the horror we all feel when the green slime starts slipping down LLM’s face again.  Yes, this video represents our feelings more accurately, because I feel like screaming.

I promise to share something a little less grotesque next week.

Race for the Cure 2011 Recap

I always enjoy the Race for the Cure 10K.  The course is gorgeous.  The distance is just right.  And for a slow runner like me, there’s no pressure.  Just me and tens of thousands people doing good in the ‘hood to raise money and awareness for breast cancer.

This year, my friend, Heather joined in the fun for her first 10K race.  I warned Heather that I often walk the water stations and not to feel bad if we separated, especially since I have a tendency to take a lot of photos while I run races.  Imagine how fast I could be if I didn’t take so many photos?

But I truly love taking photos while I run, because I capture moments like this.

 And it makes my race recaps just that more entertaining.  Otherwise, I’d have no evidence of this sweet handsome officer who volunteered to be my boyfriend.  I couldn’t resist capturing the moment.  I love a man in uniform.  Poor guy doesn’t even know what he got himself into.

But I digress…

The weather was perfect for our race.  With no humidity, it felt cooler than the forecasted 71 degrees.

The first part of the course led us along the St. Pete Pier which is always my favorite part.  As we ran towards the sunrise, the sun appeared to smile like a spectator cheering for us as we ran by.

From the Pier, we ran along the waterfront and passed the new location for the Dail museum and airfield.  This part of the course had a strange odor, like hot garbage.  Maybe they were melting more clocks for Dali’s exhibits?

Then the course led us through the streets of downtown St. Pete which was the largest portion of the 10K with a subtle incline. Thankfully, there were water stations just after each mile marker to walk it off.

The last mile, led us along the bay again and then finally to the finish line.

I was really pleased with my time.  It’s my fastest 10K time post-baby.  Heather finished about 1 minute before me and as I expected, she did great (1:03:36).  I don’t even think she broke a sweat.

This fast crew (Jackie, Tara and Scott of Suncoast Running) finished about 15 minutes before Heather and me.  Even if I stopped taking photos during races, I could never be as fast as this lot.

But from what I understand, my running friends secretly enjoy their own personal paparazzi at all the races.  And for that, I’ll keep on flashing snapping and running.

Chocolate Chip Cookie Dough Cupcakes

PhotobucketWhen my girlfriends and I go away for our annual beach weekend, obviously there’s a lot of drinking.  And all that drinking leads to a lot of snacking which means piles of chips and dips.  (You may recall my Velveeta dip post.)  And of course, after some salty snacks, everyone craves sweets and candy which also mean an assortment of sweets laying around the place.

To curb our midnight hour muchies, I prepared some real food, like my empanadas and black beans and rice.

But also I decided to go all out this year and make some dessert for my darling drunk friends.  When I saw Brandy’s Baking cupcakes featured on Sweet Tooth Friday, I wanted to try my hand at them.

They were a huge hit.  At least, I think they were.  I was three sheets to the wind so honestly I can’t remember if anyone enjoyed them, but I’m impressed that I remembered to take photos of the things.  They did look pretty, didn’t they?

The original cupcake recipe as presented by Brandy is made from scratch, but I’m too lazy to attempt anything like that.  Here’s my modified recipe for all the slacker bakers like me.

Chocolate Chip Cookie Dough Cupcakes
Makes 24 cupcakes

Ingredients
Box devil’s food cake mix
Large tub of prepared cookie dough or two tubes of prepared cookie dough.
Tub of vanilla icing
Mini-chocolate chips

Directions
Preheat oven to 350F. Line 2 cupcake/muffin pans with paper liners (24). In a large bowl, prepare the cake mix as directed on box.

Scoop batter into prepared pans. Place about 1 tsp of cookie dough into the center of each cupcake and press down lightly, making sure to cover dough with batter.  Bake for 22-24 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan on rack for 5-8 minutes. Remove from pan and let cool completely on rack.

With remaining the remaining cookie dough, round a small ball of cookie dough about 2 inches approximately the size of a teaspoon.  Place the cookie dough about 2 inches apart on a cookie sheet and bake according to directions on package.

Once the cookies are golden brown, remove cookie sheet from oven and let cool on a rack for about 5 minutes.  Then, gently remove cookies from cookie sheet and set on rack to cool completely before decorating cupcakes.

Fill piping bag with vanilla icing to frost the cupcakes.  Add a small swirl of icing and sprinkle with mini-chocolate chip cookie.  Finish cupcake by adding a small chocolate chip cookie.

The Gallery: Orange

PhotographyLiving in Florida, we rarely experience seasons which can make fall feel anything but autumn, especially when your Facebook friends and blogging buddies share lovely photos of leaves turning colors.  We do our best in these parts to experience fall, but takes a whole lot of pumpkin lattes to feel it.

To get the fall ball rolling, we decorate our house for Halloween after September 11.  With light up pumpkins and orange string bulbs, our house will begin to have an orange glow about it.  But it’s the fuzzy pumpkin throw pillows on the couch that steal the orange spotlight and make my children grin like jack-o-lanterns.

While thrift shopping for Halloween costumes last week, we stumbled upon a pumpkin pillow similar to ours.  For $2.07, my oldest daughter insisted I splurge on the pillow, because Jack looked like he needed some pumpkin friends.  Being the sucker for a bargain, we brought Jack home.  A quick toss into the dryer to kill the dust mites and Jack was as good as new.

Once he found a patch for himself on the couch, I do believe his grin grew a bit wider.

Random Thoughts about Saddlebags and BFFs

After Allana’s remarks about my muffin top and viewing the photos from our girlfriend getaway, I cranked up the strength training and muscle conditioning last week.  I’m not being too hard on myself.  Trust me.  My girlfriends and I were having a Hangover moment looking at the photos.  “Ewwwww!  “Oh God!”  “What the…?!”  I vaguely recall as some of the things said as we flipped through the images on Kelly’s camera.

At the time the photos were taken, we must have been wearing some heavy duty beer goggles, because we thought we looked HOT.  The next day….not so much.  So, after a week of recovery and detoxing from our little weekend bender, I knew boot camp and kickboxing with my BFF Sharon Mann would be the only way to bust these saddlebags.

But I forgot we canceled the TiVo, which meant I lost all my prerecorded exercise programs.

Yep, after years of hanging out with my happy little TiVo, we canceled our service and honestly I really do miss his smiley little antennae head.  But we already have cable throughout the house, so the extra cost for TiVo didn’t make much sense since we can add DVRs at no additional fee.  Therefore, it was time to say good-bye to TiVO, my BFF Sharon Mann and all her work-outs I knew by heart.


 
But the beauty of cable is all the On Demand programming at your fingertips!  All I had to do is find the Exercise TV On Demand channel and search for a work-out in the menu.  And that’s where I found my new BFF Amy Dixon.  Amy and I did an Advanced Boot Camp work-out and a kickboxing work-out and she totally kicked my ass.  I had delayed on set pain for two days.  It rocked!

I tweeted about my new BFF @amydixonfitness and our ass-kicking kickboxing saddlebag-busting work-out.

And she tweeted back!  How freaking cool is that?!

Sharon just never appreciated me.  Amy gets me.  She’s my sole mate.

On Thursday, my Garmin was dead, but I guestimated that I ran 3.1 miles in about 35 minutes.  And then halfway through my run, my MP3 player died.  Good times.  So although it only took me about 35 minutes, it felt like FOREVER without any music.

Later that day I discovered why my Garmin wasn’t working.  Little Lion Man keeps messing with the electronics on my desk and his little grabby, pudgy piggy fingers knocked my Garmin off its cradle.  He’s getting out of control with his climbing and reaching for stuff.  UGH!

The weather has been GORGEOUS for the past few days.  A cold front rolled through over the weekend and took the humidity with it.  It’s such a pleasant experience to open the door and be greeted by cool air instead of sticky, thick, hot air.  The morning lows have been sitting around 58 degrees which is PERFECT running weather.  I even shaved 3 minutes off my 5K time.
