Pinning and Planning – Cinco de Mayo Edition {dinner menu}

PinningPlanning RunDMT Pinning and Planning Week of April 28 {Dinner Menu}I love Mexican food. Truth be told, I just love food, but toss in a holiday that focuses on food and I’m happier than Mariachi Band on Cinco de Mayo.

With Cinco de Mayo falling on a Monday this year, it really put a thorny cactus in my Meatless Monday plans. How can I not eat meat on Cinco de Mayo?!

Since I’ve committed to the whole “Meatless Monday” idea, I solemnly swear to not eat meat today, however, I will splurge with a some shrimp although I can’t quite make the same promise for my family.  In fact, they have already requested tacos tonight. I’ll drown my family’s carnivorous guilt with one of Iron Chef Allan’s absolutely delicious margaritas.

For this week’s Pinning and Planning, I wanted to compile some of my favorite Mexican-themed and Tex-Mex dishes for Cinco de Mayo. Listed below are the Run DMT tested and true recipes that are a hit with my family.

Cinco de Mayo

Roasted Vegetable Mexican Lasagna

Roasted Honey Lime Zucchini Quesadillas

Mexican Lasagna

Pollo Relleno

Chicken-Mushroom {and Spinach} Quesadillas

Ground Turkey Tacos

Turkey Enchiladas

Copycat Chipotle Burrito Bowls with Cilantro Lime Rice

Chicken Veracruz

Wholly Diablo Shrimp

Banging Baked Fish Tacos

Blackened Baja-Style Tilapia

Mexican Wedding Cakes

Piña Colada Cupcakes

Better Than Margaritaville Margaritas

For Cinco de Mayo tonight, I will be enjoying shrimp-lime lettuce wraps while my family crunches on tacos.  As for the rest of the week, here’s how our dinner menu looks.

Meatless Monday – Tequila Lime Shrimp Lettuce Wraps with Margaritas

Tuesday – Lentils and Pasta

Wednesday – Butterflied Whole Chicken with BBQ Sauce and Low Fat Classic Cole Slaw

Thurday – Brinner (Breakfast for Dinner)

Friday – Pizza

How are you celebrating Cinco de Mayo today? What are some of your favorite Mexican dishes? What’s on your dinner menu this week?
