Pinning and Planning Our Dinner Menu – Week of August 2

This week, our dinner menu is full of chicken dishes, but there’s nothing “fowl” about it. See last week while shopping for a few mid-week dinner items and breakfast staples at my local Publix, I happened to notice a reduced price on Murray’s organic boneless chicken breasts. I believe this was a in-store special, because I watch the Publix weekly sales for specials and this savings was not printed in this week’s ad.

Typically, the Publix Greenwise organic store brand will go on sale for $5.00 a pound, but $3.49 per pound is unbelievably low. Plus, I happened to have printed the 50 cents off coupon from the Murray’s site. So, $3 for a pound of organic chicken breast is a STEAL and I stocked up.

And this week, there’s a whole lot of chicken dinners!

The availability and amazing low price Murray’s Chicken brings to light another issue. In the past month, the US consumers have seen two significant bills be voted down by the Senate: GMO Labeling by States and “Country of Origin” labeling.

These bills were two big blows to health conscious consumers and disappointing to say the least. However, for the organic consumer, like myself, it validates my reason to support USA organic farmers and to keep purchasing organic products, like Murray’s (a PA based organic farm), which proudly states where their livestock are humanely raised.

While visiting Europe this summer, I was blown away by the labeling, including allergens, country of origin and GMOs. If the same ten food manufacturers feed the world and have to meet the labeling guideline abroad, why aren’t those same standards followed here?

All right, I’ll step down off my organic crate soap box now. How about I just get on with this week’s dinner menu instead?

Sunday – Family Day at Universal Studios (dinner out)

Meatless Monday – Mediterranean Hummus Wrap (hummus, feta crumbles, Kalamata olives, red peppers, shredded lettuce and sliced tomatoes rolled in a spinach tortilla)

Tuesday – Caprese Grilled Chicken Paninis

Wednesday – Pulled BBQ Chicken Sandwiches with Low Fat Cole Slaw

Thursday –  Mojo-Marinaded Grilled Chicken with Rosemary Oven Roasted Potatoes

Friday – My Nephew’s Birthday (dinner out)

    And yes, removing the county of origin is enough to make me go vegetarian. SO FRUSTRATING.

    I wish we had better labeling laws here – I always wonder why cover it up unless sellers are trying to hide something? I dunno. Full disclosure makes so much more sense.

    I hope your day at Universal wasn’t too soggy.
    I personally wish we could trust labeling more. I feel like every one is trying to hide the truth. In our country where so much of our food production is fueled by the almightily buck. Wish we could have more transparency with our packaging.

    I wish we had all the labeling requirements of other countries and I don’t even buy organic or Non-GMO or whatever. I just think that everyone would increase quality if that happened. I buy my chicken breast at MD Oriental Market for $1.99. It is not organic, but it makes for super cheap and yummy dinners. I love that they trim all the fat too. No fatty undersides like the chicken I buy at Publix. I hope you aren’t too flooded up in LOL. Miss you!
