Pinning and Planning Our Dinner Menu – Week of September 6

I don’t know about you, but I’m really looking forward to this long weekend to just CHILLAX. The last few weeks have been so hectic getting back into the back to school routine and I want to take this weekend to slow down and hang on to the last few days of summer and my sanity.

Besides running seven miles this weekend as part of my Rock ‘N Roll Savannah Half Marathon training, my only plans include spending time at the pool with my family and enjoying a good ol’ fashioned holiday weekend cookout with our extended family.

This week, all our after-school activities start up again. After giving my kids and myself a couple of weeks to adjust to a long school day schedule, now it’s time to slowly add the activities they enjoy: horse riding lessons for Emmlaynn and soccer for Liam.

Each child chooses only one after school activity because it becomes a scheduling-carpooling nightmare for me if they do more than one activity. I need to keep my sanity and they need down time to be kids as well as have time for homework. In addition to after school activities, my 13 year old, Allana, needs to volunteer to meet her Junior National Honor Society outreach requirements.

I know what you are thinking. If I thought the last couple of weeks were hectic, I’m in trouble once the after-school activities start. However, by limiting it to one activity for each of my three children, it’s completely manageable and prevents a scheduling nightmare. Plus, I’m able to strive towards my goal for 2015: BALANCE.

So, with after school activities starting up this week and me adjusting to life as the mom taxi again, the menu needs to offer quick and simple meals or make ahead meals that can simmer all day. Thankfully, Iron Chef Allan is home this week so he has offered to help with dinner a couple times this week.

Here’s our busy back to after school activities dinner menu for the week.

Tuesday – Ground Turkey Tacos

Wednesday – Red Beans and Rice  with Bourbon Chicken

Thursday –  Chicken Tikka Masala with Kachumber Salad

Friday – Pizza

    Wow, that blueberry quinoa cobbler looks so good I saved the page. My whole Labor Day weekend went by in a blur- it’s hard to believe it was 3 days, I would be happy with another day off!

      It flew by, didn’t it? I spent Monday in my pajamas! lol That cobbler is delish and goes nicely with cream or frozen yogurt.
