Why is that after a long weekend, I’m exhausted? It seems any time the kids or I have an extra day off, it creates more work for a shorter work week.
The week after Labor Day weekend, I spent the week playing catch-up and by the time the weekend rolled around, I was shattered. Not to mention, I also caught a nasty cold. Bleh.
On top of that, my family and I are still trying to adapt to the Back to School routine with after school activities sprinkled throughout the week. It’s no wonder I’m exhausted. Can I get a three day weekend redo?
So, while we try to survive week four of the Back to School routine, I’m still keeping dinner simple and quick. Here’s our dinner menu for the week. Stay tuned for Iron Chef Allan’s 1967 Salad recipe.
Tuesday – Brinner (Breakfast for Dinner) Egg and Cheese Sandwiches
Wednesday – Skinnytaste’s Orecchiette with Chicken Sausage, Baby Kale and Bell Pepper (The Skinnytaste Cookbook, but a similar recipe can found here.)
Thursday – Leftovers
Friday – Pizza
