{Meal Planning} Pinning and Planning Our Dinner Menu – Week of April 3

Hey, remember me? I know it may appear I fell off the meal planning wagon, but I promise you. I was still rolling out the menus. Well until the flu rolled through my house.

The week of St. Patrick’s Day just before Spring Break, my poor ten year old daughter came down with the flu and missed an entire week of school. To prevent any further kid outbreaks, my other two kids had a ten-day dose of Tamiflu. While they dodged the flu bullet, it hit me hard.

I spent the entire week of Spring Break in bed and was down for nearly two weeks. It was not pretty.

Thankfully, my husband had taken vacation time off from work, but instead of fun Spring Break adventures, he played my nursemaid. At the same time, we had friends visiting from Ireland and high hopes of wonderful beach adventures.

Instead of three days of splashing in the sun on St. Pete Beach visiting with our Irish friends, I spent one day full dressed wrapped up in towels on a beach lounge chair and felt like I would die. Thank goodness the beach is my happy place and I have this snapshot in time to savor. But what I wouldn’t give for a Spring break redo!

My husband tried his best entertaining our friends and kids with a trip to Busch Gardens and sent me photo texts in a “wish you were here” attempt to cheer me up.

Thanks to the flu, we didn’t have much of an Easter. The Easter Bunny hopped in and we hunted for eggs, but for being ground zero for the flu and my lack of appetite and energy, I couldn’t face hosting Easter at our house. Overall, it was a pretty lackluster Easter.

Last week the kids were back at school and I finally felt better by Wednesday although my appetite was still pretty scarce and I wasn’t eating much. Suffice to say, there were a lot of bland sandwiches on the menu.

Things are back to normal now. My energy and appetite is back, but now Allan will be traveling a lot this month.  For that, our menu will be full of simple family favorites.

Sunday – Grilled Flank Steak with Chimichirri Sauce, Roasted Rosemary Fingerling Potatoes and Asparagus with a 1967 Salad

Meatless Monday – Baked Ziti

Taco Tuesday – Ground Turkey Tacos

Wednesday – Baked Chicken Parmesan Sammies with a Simple Marinara Sauce

Thursday – White Cheddar and Roasted Broccoli Baked Potatoes

Friday – Pizza
