{Meal Planning} Pinning and Planning our Dinner Menu – Week of April 24

Life truly is a rollercoaster. As we twist and turn through the days, we’re thrown moments filled with such highs and then plummeting lows. Last week, I definitely experienced multiple highs. Then this week, life decided to throw my family some real downers.

In a 24 hour period, two uncles on both sides of our family passed. We lost Uncle Robert, my husband’s namesake who played the bagpipes at our wedding.

Uncle Robert had a larger than life presence, a joyful way about him and a warm soul. When the two families came together at our Italian/Hispanic American-Scottish culture clash of a wedding, he showed such kindness to my parents and treated my father like one of his own Taylor brothers. My father never forgot that.

Less than 24 hours later, we lost our Uncle Tommy, a kind man and known in our family as the “historian”.

Growing up, Uncle Tommy worked as a custodian at my middle school. I saw him every day for two years and I appreciated his watchful eye during a tough period and fatherly advice.

In recent years, I enjoyed connecting with him on Facebook and he often posted old family photos which we all adored.

On Sunday, although we were brought together to honor the life of Uncle Tommy, we celebrated him the only way we know how with lots of food, laughter and of course, photos.

Photos may capture the moments that we cherish for years to come, but food is life. It is at the heart of everything we do. It connects us. Family is the seasoning that flavors it all.

Sunday – Leftover Pulled Pork Cuban Sandwiches

Meatless Monday – Leftover Black Beans and Rice with Baked Plantains

Tuesday – (Brinner) Breakfast Skillets

Wednesday – Ground Turkey Meatballs and Spaghetti

Thursday – Black Bean Pepper Jack Quesadillas

Friday – Pizza
