Kiss Me

For this week’s Music Monday, I’m co-hosting with Xmas Dolly and her Monday’s Music Moves Me crew: Lorie, Stacy, Callie and Cathy.  These ladies are such wonderful, supportive people and I am THRILLED to be part of this with them!

And what better way to show my love and appreciation then with a kiss? I mean, it’s Valentine ’s Day and all.  Well, how about a juicy, wet kiss from Little Lion Man?

He’s refined his kiss a bit since the holidays.  Now, he can blow you a kiss…

…with a little smack of a sound at the end. Muwah!

How stinking cute is that?! Don’t you just want to smother him with kisses?

Now it’s your turn. What love songs have you hitting re-peat-peat-peat-peat-peat-peat?

February Challenge: Love My Abs {Launch & Linky Party}

Runners know the importance of adding ab exercises to training but fitting it in is the real chore of core training.

If you follow me on Twitter, then you may have seen me occasionally use the hashtags #sixpksabs or #100pushups.  See, my Twitter running tweeps (@ForrestGump49er  @RunningRealtor1 @tryn2bfit @runningmom2boys) and I often try to encourage each other with these small challenges.

So, to keep up the motivation and support, I had an idea for a new challenge starting February 1.  It’s a challenge to work our core, called #lovemyabs.

Basically, during the month of February, each participant attempts 100 daily ab exercises.  Do all 100 reps at once or break it up throughout the day.  It’s entirely up to you and what fits best into your lifestyle.

Then, each week slowly increase by adding another set of 20 reps.  In other words, the first week you do 100 reps.  Then week two, you attempt 120 reps. By week three, you go for 140 and by week four, you should be close to 160 reps.

The plan would look something like this:

Week 1: 2/1-2/7 = 100 reps

Week 2: 2/8-2/14 = 120 reps

Week 3: 2/15-2/21 = 140 reps

Week 4: 2/22- 2/29 = 160 reps

This is just a guideline.  If you can do more reps, then go for it!  If it’s too much, then try a set of 10 reps ten times throughout the day.  Remember the important thing is to show your abs some daily love.

Also, this isn’t just about doing 100 crunches every day, although you could totally do that if you want.  There are so many great ab exercises out there, so mix it up and have fun!

And by the end of the challenge, you’ll have over 3000 ab exercises under your belt.  Now, you gotta love that!

If you want to join the #lovemyabs challenge, grab the button, link back to Run DMT and sign the linky below. By joining the linky party, others can visit your blog to show support and offer encouragement.

Blog about your #lovemyabs experience daily or write a weekly recap because we want to see your progress.

Then, swing back here every Wednesday to link up and share your #lovemyabs post.

If you’re not a blogger, you can still participate.  Simply add your Twitter ID/profile homepage to the linky party and tweet about the challenge using the hashtag #lovemyabs.  Talk it up on Facebook and Google+, too.  Encourage your friends to show their abs some love too.

So who will love their abs this February?

Chicken Salsa Soup

PhotobucketA few weeks ago, as part of our New Year’s resolution, Iron Chef Allan and I thought it would be fun to have soup for dinner on Sundays, which we would appropriately call “Soup Sundays”.  Original and clever, I know.

Our Soup Sundays would help us spice our usual menus by trying some recipe as well as returning some forgotten favorites into the mix.  Upon our first installment of Soup Sunday, we decided to try a new recipe and Rachel Ray’s Chicken Salsa Soup.

Does anyone tear recipes out of magazines and store them into a notebook?  Well, this particular recipe had been tucked away in my notebook for a couple years.  Such a sin, because this soup is too delicious not to try!  And it was a perfectly delicious pick to start our Soup Sundays!

We modified the soup recipe by adding chicken breast instead of thighs, because we don’t like dark meat.

Also, before you start the soup, you have to make the Rachel Ray’s Salsa Fresca.  It’s the base for the soup, but it is also delicious with tortilla chips or as topping to any Tex-Mex dish.  There’s a ton of cilantro in it, which I love, because you can never have too much cilantro in salsa!

Rachel Ray’s Salsa Fresca (Borrowed from Everyday with Rachel Ray Magazine.)

Ingredients

1 cup packed coarsely chopped cilantro

2 cloves garlic

½  onion, coarsely chopped

1 jalapeño chile, halved lengthwise

2 ½ pounds ripe tomatoes (7 or 8), cored and quartered

Juice of 1 lime

Salt

Directions

Using a food processor, pulse the cilantro and garlic together for 30 seconds. Scrape down the sides, add the onion and jalapeño and pulse until finely chopped; transfer to a medium bowl.

Working in batches, add the tomatoes to the food processor and pulse until finely chopped. Add to the cilantro mixture. Stir in the lime juice; season with salt.

Rachel Ray’s Chicken Salsa Soup (Borrowed from Everyday with Rachel Ray Magazine.)

Ingredients

¼ cup extra-virgin olive oil

1 onion, chopped

1 head garlic, cloves finely chopped

2 pounds skinless, boneless chicken breasts

One 32-ounce container (4 cups) chicken broth

1 ½ cups Salsa Fresca

Salt

1 avocado, thinly sliced lengthwise (optional)

1 cup chopped cilantro (optional)

¼ cup sour cream (optional)

Directions

In a large Dutch oven, heat the olive oil over medium-low heat. Add the onion and cook, stirring occasionally, until softened, about 7 minutes. Add the garlic and cook for 3 minutes. Add the chicken breast and broth, bring to a boil and simmer for 4 minutes. Stir in 1 cup salsa, cover and remove from the heat. Let stand until the chicken is cooked through, about 45 minutes. Transfer the chicken to a cutting board and shred.

Return the broth to a simmer; season with salt. Add shredded chicken to pot.

When ready to serve soup, top each bowl with avocado, cilantro, sour cream and remaining salsa.

A Northern Sky, a Cool Yule and a Miracle

Does any else feel like Christmas threw up on them?  That’s the ugly metaphor I’m choosing to describe the Christmas chaos I’m feeling.  You should see the state of my house.  I think the tree is finally decorated, but I still have a gazillion cards to post and a pile of last minute gifts still yet to buy and of course, tons of wrapping to do.

However, all of that will be put on hold, because today I am chaperoning a field trip to Legoland with Allana’s class.  I plan to write some cards on the bus on the way, but with how car sick I get, I could literally puke Christmas.  I may need to rethink that plan.

Anyhow, this Music Monday post will be a little light today because I’ve got so much to do, like blog about our anniversary date in the midst of the Christmas madness.  Yesterday, Allan and I had a fabulously fun Serendipity-style date, but I’ll explain all that in great lengths in another blog post.

While you wait for all the details, I’ll tease you with a movie clip from Serendipity set to Nick Drake’s Northern Sky.

If you didn’t know already, I have this thing for movie soundtracks and I absolutely LOVE the Serendipity soundtrack, so I have to include the song even though it’s not a Christmas song.  It’s a very fitting song for our anniversary because my Allan comes from a northern town in England and of course, like I said, a perfect way to tie in a tease about our Serendipity-style date.

But Christmas music has been the Music Monday (and Xmas Dolly’s Monday’s Music Moves Me) theme for the past month, so I’ll share a Christmas song from Serendipity.

And since tomorrow night is the first night of Hanukkah, I’ll leave you with some Matisyahu.  Besides, it will take nothing short of miracle to help me with all this Christmas chaos.

Holiday Inn Captured My Heart

I took my best girl to the cinema yesterday.  Just me and my gal catching a show and we had a swell time, see.  A real swank time, I tell you.

It’s hard to shake the circa 1940s slang after being immersed in it for a couple hours.  As an early Christmas present, I bought tickets for Holiday Inn for my sister since it’s her favorite Christmas movie.  She was surprised to learn that I had never seen it so she asked me to join her rather than her hubby.

With its old world charm, the Tampa Theatre is the perfect cinema for a showing of a classic film and I loved watching the movie for the first time on the big screen as it was intended.  The larger than life dance numbers and set designs help your appreciate the art of film-making in a time before CGI and green screens.

Fred Astaire and Bing Crosby’s characters were delightful and endearing, like the way you want to remember these classic Hollywood film stars.  Although as beloved as they are, it’s the songs and the dancing that truly steal the show, of course.

The song, White Christmas, makes its debut in Holiday Inn, however, most people know it as the theme song for White Christmas, which will also be showing this holiday season at the Tampa Theatre on December 23.

Much like my sister, Holiday Inn captured my heart with singing and dancing.  I enjoyed watching this classic Christmas movie on the big screen so much that I plan to make this a new holiday tradition for us.

That’d be swell, I tell ya.  A real hot dog!

In My Life

For the past year, I’ve worked extremely hard on repairing some broken relationships.  It took a lot of patience, trust, honesty and understanding to rebuild those relationships, but it was so worth it.  Now, my life is full of laughter rather than pain.

Or so I thought.  As I expended my energy into one relationship, other relationships unraveled because I hadn’t been as plugged into some big events as I should have been.  My lack of presence and support was perceived as a lack of empathy.

When I heard I let my sister and friends down for various reasons, it stopped me dead in my tracks.  Somehow between running around after my family and running in races, I had missed some important events and it’s not like me to not be there for loved ones.  However in these incidences, I wasn’t and I hurt them terribly.  When I heard I let them down, I cried for weeks.

Even now, the pain I know I caused brings tears to my eyes. I live a rich life because of my family and friends. Their relationships are bountiful blessings. Without them, my life would be empty and lonely.

Somehow I have to find balance between my own family, my extended family on both sides and my friends. That’s why I am so grateful for the 30 Day Challenge, because it forces me to stop and remember everything and everyone that is important in my life, whether it’s spending time with them or sending them a note to say, “I love you. I appreciate you in my life.”

Of course with schedules, it’s hard to coordinate time to spend together, but we’ll make it happen.  And for that, I’m thankful.

For the next four Music Mondays, I’ll be counting my blessings through song.  Each week in November, I will be singing my praises and giving thanks by sharing a song that symbolizes one of the many blessings in my life.  Come count your blessings with me and link up while you’re here.  What a blessing that would be!

Shades of Autumn: White

This week’s Shades of Autumn Photo Challenge had me thinking outside of the lens.  How could I capture white in Florida?

Typically the only white to be found in fall in Florida is the sugary white sand at our beaches or the puffy white clouds against our cerulean skies.  Other than that, we don’t see a whole lot of white in these parts.

But then, with Thanksgiving around the corner and Christmas coming soon, it is baking season much like every other part of the country.  So, we’re seeing a lot of white in our kitchen these days.

Every year my mom sister, my girls and I plan a marathon Christmas cookie baking day and we just nailed down a date for this year’s cookie craziness.  Since it’s only a couple weeks away, I need to start planning my cookies and making sure I have enough ingredients in the pantry, which led to me flipping through the pages of my favorite cookbook (the third tattered copy and very loved Joy of Cooking) for my favorite cookie recipes.

As you can see, I’ve added my own notations for the perfect Snickerdoodles and Viennese Crescents.

Of course, Peppermint Bark will make Christmas cookie the list again.

Sweet Child{ren} of Mine

I am blessed with three beautiful, brilliant children, who constantly make my smile.

I love the little people they are growing up to be, but the true blessing is that I get to watch it happening before my eyes.

Every day, they amaze me.

And every day, they give me another reason to celebrate whether it’s making honor roll…

or a little man who picks up after himself.

I am so thankful for the laughter and joy they bring, the tears I get to kiss away and the cuddles that my children continuously give me.

I am so truly thankful for each one of them in my life.

Last week, I let my blogging buddies down when I didn’t share an 80s tune, per my request to Xmas Dolly. Although I missed the memo, everyone else played along with 80s tunes for Music Monday.  To redeem myself of my epic blogging fail, I shared an 80s tune today while giving thanks.  All better!  We’re good now, right?

For the next four Music Mondays, I’ll be counting my blessings through song.  Each week in November, I will be singing my praises and giving thanks by sharing a song that symbolizes one of the many blessings in my life.  Come count your blessings with me and link up while you’re here.  What a blessing that would be!

  1. Ran 53.6 miles in races before turning 40 on July 27.

Chocolate Chip Cookie Dough Cupcakes

PhotobucketWhen my girlfriends and I go away for our annual beach weekend, obviously there’s a lot of drinking.  And all that drinking leads to a lot of snacking which means piles of chips and dips.  (You may recall my Velveeta dip post.)  And of course, after some salty snacks, everyone craves sweets and candy which also mean an assortment of sweets laying around the place.

To curb our midnight hour muchies, I prepared some real food, like my empanadas and black beans and rice.

But also I decided to go all out this year and make some dessert for my darling drunk friends.  When I saw Brandy’s Baking cupcakes featured on Sweet Tooth Friday, I wanted to try my hand at them.

They were a huge hit.  At least, I think they were.  I was three sheets to the wind so honestly I can’t remember if anyone enjoyed them, but I’m impressed that I remembered to take photos of the things.  They did look pretty, didn’t they?

The original cupcake recipe as presented by Brandy is made from scratch, but I’m too lazy to attempt anything like that.  Here’s my modified recipe for all the slacker bakers like me.

Chocolate Chip Cookie Dough Cupcakes
Makes 24 cupcakes

Ingredients
Box devil’s food cake mix
Large tub of prepared cookie dough or two tubes of prepared cookie dough.
Tub of vanilla icing
Mini-chocolate chips

Directions
Preheat oven to 350F. Line 2 cupcake/muffin pans with paper liners (24). In a large bowl, prepare the cake mix as directed on box.

Scoop batter into prepared pans. Place about 1 tsp of cookie dough into the center of each cupcake and press down lightly, making sure to cover dough with batter.  Bake for 22-24 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan on rack for 5-8 minutes. Remove from pan and let cool completely on rack.

With remaining the remaining cookie dough, round a small ball of cookie dough about 2 inches approximately the size of a teaspoon.  Place the cookie dough about 2 inches apart on a cookie sheet and bake according to directions on package.

Once the cookies are golden brown, remove cookie sheet from oven and let cool on a rack for about 5 minutes.  Then, gently remove cookies from cookie sheet and set on rack to cool completely before decorating cupcakes.

Fill piping bag with vanilla icing to frost the cupcakes.  Add a small swirl of icing and sprinkle with mini-chocolate chip cookie.  Finish cupcake by adding a small chocolate chip cookie.

Now link up and see what If I Could Escape and Gone Bananas are serving for this week’s Friday Food Fight.
