Chocolate Chip Cookie Dough Cupcakes

PhotobucketWhen my girlfriends and I go away for our annual beach weekend, obviously there’s a lot of drinking.  And all that drinking leads to a lot of snacking which means piles of chips and dips.  (You may recall my Velveeta dip post.)  And of course, after some salty snacks, everyone craves sweets and candy which also mean an assortment of sweets laying around the place.

To curb our midnight hour muchies, I prepared some real food, like my empanadas and black beans and rice.

But also I decided to go all out this year and make some dessert for my darling drunk friends.  When I saw Brandy’s Baking cupcakes featured on Sweet Tooth Friday, I wanted to try my hand at them.

They were a huge hit.  At least, I think they were.  I was three sheets to the wind so honestly I can’t remember if anyone enjoyed them, but I’m impressed that I remembered to take photos of the things.  They did look pretty, didn’t they?

The original cupcake recipe as presented by Brandy is made from scratch, but I’m too lazy to attempt anything like that.  Here’s my modified recipe for all the slacker bakers like me.

Chocolate Chip Cookie Dough Cupcakes
Makes 24 cupcakes

Ingredients
Box devil’s food cake mix
Large tub of prepared cookie dough or two tubes of prepared cookie dough.
Tub of vanilla icing
Mini-chocolate chips

Directions
Preheat oven to 350F. Line 2 cupcake/muffin pans with paper liners (24). In a large bowl, prepare the cake mix as directed on box.

Scoop batter into prepared pans. Place about 1 tsp of cookie dough into the center of each cupcake and press down lightly, making sure to cover dough with batter.  Bake for 22-24 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan on rack for 5-8 minutes. Remove from pan and let cool completely on rack.

With remaining the remaining cookie dough, round a small ball of cookie dough about 2 inches approximately the size of a teaspoon.  Place the cookie dough about 2 inches apart on a cookie sheet and bake according to directions on package.

Once the cookies are golden brown, remove cookie sheet from oven and let cool on a rack for about 5 minutes.  Then, gently remove cookies from cookie sheet and set on rack to cool completely before decorating cupcakes.

Fill piping bag with vanilla icing to frost the cupcakes.  Add a small swirl of icing and sprinkle with mini-chocolate chip cookie.  Finish cupcake by adding a small chocolate chip cookie.

Suck It Up This Summer

PhotobucketTime for another edition of Slacker Mom Confessions: I bribe my children.

I have never professed to be perfect.  Lord knows I am far from it.  For me, motherhood is all about survival.  In fact my motto as I roll into my 40s is “I’m not seeking approval.  I’m just trying to survive.”

And for about $1, these icy, sweet, nothing natural, saturated with food coloring slushees from Target help me do just that.

When I shop at Target with my girls, especially during the hot summer months, I willingly buy my girls a slushee.  If they are good while we shop, they can refill their cups before we leave the store.

Works like a charm every time.  Whatever it takes, my friends and in this case, it’s a little Blue #1 and Yellow #5.

And there will be a lot of it this summer.  Sweet.

It’s a Shoe-In

PhotobucketTo all my OCD readers, I realize I misspelled the phrase shoo-in.  Deep breaths and let it go and just go with it for the sake of this Friday Food Fight post and my clever play on words.

My sister and her husband recently visited Amsterdam and they returned with a pair of wooden shoes for me which I’m not quite sure how to fit my feet into yet.  But they also brought back a box of a stacked waffle sandwich cookies filled with gooey, sticky caramel.

These deliciously wonderful waffle cookies are so sweet that I can only eat half of a cookie and my hips are thankful for that.  The preparations on the box suggest heating the cookie in the microwave for a few seconds or over a hot cup of coffee to soften the filling.  Either way is a warm gooey yummy delicious mess.

 Speaking of coffee, I need to share my new favorite guilty pleasure.  A few months ago, I started adding vanilla soy milk to my morning coffee and I’m really enjoying the sweet creaminess it adds to my coffee.  It tastes like a flavored creamer minus the corn syrup and other garbage in most non-dairy creamers.

Admittedly, Starbucks grande non-fat vanilla lattes are my guilty pleasure.  However, as much as I love vanilla lattes, I don’t love all the calories.  So, with my recent soy milk substitution, I began ordering a brewed grande coffee with soy milk and two pumps of vanilla.  It’s my new guilty-guilt-free-pleasure, because it tastes just like a full fat vanilla latte but costs less and equally delish.  Trust me.

It’s a shoo-in (spelled correctly just for my OCD readers).

A Purple Picnic for Epilepsy

Over spring break, Auntie Kirsten and I put together an impromptu purple picnic for our girls, a fine fuchsia feast that included two bite cupcakes and purple Peeps.

 

 

It was a deliciously fun time for a good cause.

A Bootiful Masterpiece

At our Moms on the Go Halloween party, Allana proudly posed for a picture with a cupcake that she cleverly designed all by herself.  While the other children simply smeared on icing and sprinkled a few toppings on their cupcakes, Allana created a bootiful masterpiece.  With a dab of vanilla icing, she created a small ghost.  She added two sprinkles for the eyes and another for its mouth.  The candy corn represents a tombstone in a graveyard.  Isn’t it spootacular?

Sea World’s Halloween Spooktacular

Recently, I was selected as a Mommy Reporter to review Sea World’s Halloween Spooktacular.  As a Mommy Reporter, my family and I would receive complimentary tickets to the park on the condition that I would write about our experience.

 

 

Happy to oblige, I dressed my children in Halloween apparel and we headed over to Orlando for a fun-filled day.  When we entered the park, we were greeted by Shamu dressed in a pirate costume.  Shamu would be the first of many characters throughout the park that my girls would not want to associate with. 

 

Upon entering the designated Halloween Spooktacular, a tsunami of bubbles fell upon us.  Two friendly Sea World workers handed my girls treat bags to collect their goodies along the way.  Trick-or-treat stations were situated along a path leading to Shamu’s Happy Harbor

 

 

Many colorful characters entertained us as we strolled along on our search for candy.  Although the costumes were stunning, my daughters were not interested in interacting with any of them.  Usually, my daughters are more than happy to pose with a princess.  Perhaps, they didn’t recognize Sea World’s sea of characters which could explain their reluctance.

 

As to be expected, there were plenty of sweet treats.  After several candy stops, I was very thankful for the healthy alternatives, such as small packs of peanuts and mini bananas, but I don’t think me girls were as grateful for the healthy treats.

 

 

When we arrived at the Wild Arctic, we encountered an unusually hot spot.  Frost bitten pilots and park guests were busting moves at a very cool dance party in the Frozen Fun Zone.  An Ice DJ played toe-tapping tunes encouraging everyone to dance, except for my girls.  My little pumpkins were more interested in collecting more sweets than showing off any sweet moves.  However, I managed to steer them away from the sweets long enough to visit with the polar bears, walruses and beluga whales of the Wild Arctic exhibit.

 

 

Since neither of my girls wanted to drag themselves away from the candy, we unfortunately missed Sesame Street’s Countdown to Halloween.  Once arriving in Shamu’s Happy Harbor, they were happy to ride a variety of the preschooler friendly rides. 

 

 

After a few spins on the rides in Shamu’s Happy Harbor, my pumpkins insisted on seeing Sea World’s main attraction: Shamu.  Shamu and other killer whales are the stars of Believe.  The talents of the trainers and its main cast of characters are always a breath-taking and fun experience.

 

 

As to be expected, Shamu was a huge splash with my family, but afterwards we were feeling a bit dehydrated.  To quench our thirsts, we headed over to the Hospitality House for some refreshments.  Just like Busch Gardens, Sea World offers two free samples of beer to guests over the age of 21.  While sampling our Samuel Adams and Shock Top, we posed with our grown-up treats for my oldest daughter to take our picture.

 

 

Following our two beer binge minimum, we stopped by Blue Horizon.  The acrobatic talents of the dolphins, aerialists and divers were truly breathtaking.  The beautifully choreographic birds in flight pirouetted around the acrobats as they spun in the air.  Their bright and colorful costumes danced with each gesture and movement.

 

For the remainder of the day, we walked through the park and enjoyed the animal exhibits.  Strolling through the long underwater tunnel of Shark Encounter conjured up memories of a similar Sea World scene for me as a young girl.  I enjoyed reliving that memory through my children’s eyes.

 

My girls loved the hands-on experience of Sting Ray Lagoon.  Like excited puppies, the sting rays happily greeted each hand waiting to pet them.

 

 

My family and I appreciated the opportunity to experience a “spooktacularly” good time at Sea World this season and we are looking forward to partake in The Polar Express during the holidays.
