Rich colorful fingerling potatoes oven roasted with rosemary, olive, salt and pepper.
  • 2 lbs fingerling potatoes
  • ¼ cup olive oil
  • 1 sprig rosemary, roughly chopped
  • 1 tsp salt
  • ½ tsp ground black pepper
  1. Preheat oven to 400 degrees.
  2. Toss fingerling potatoes in a large bowl with olive, salt, pepper and rosemary until well coated. Spread potatoes out on baking sheet.
  3. Place in oven and bake for about 45 minutes or until fork tender. Toss potatoes sporadically to prevent sticking.
