Soba Noodles with Teriyaki Chicken and Broccoli

Soba noodles with teriyaki chicken and broccoli make for a delicious and nutritious dinner. While this recipe would take about an hour to finish, most of that is idle time. Once you have made the teriyaki sauce and marinated the chicken, you can cook the others in less than 10 minutes. This recipe can serve four to five people
Ingredients
  • 2 packages or about 5.6 ounces of refrigerated soba noodles
  • 3 cups of frozen broccoli florets
  • One tablespoon of cornstarch
  • One-third cup of sodium soy sauce
  • One-fourth cup of brown sugar
  • Three cloves of garlic, minced
  • One tablespoon of freshly grated ginger
  • Two tablespoons honey
  • One pound of bones and skinless chicken thighs
  • One green onion, sliced
  • One teaspoon of sesame seeds
  • One tablespoon of olive oil
  • A quarter cup of water plus another one cup of water
Instructions
  1. Boil water in a large pot. Add the soba noodles until loosened. This should take about two minutes. Then drain well.
  2. Whisk together the cornstarch and a quarter cup of water in a small bowl. Set aside.
  3. Add the brown sugar, soy sauce, ginger, garlic, honey and another cup of water in a small saucepan placed over medium heat. Bring to a simmer.
  4. Stir in the cornstarch mixture until it is thick enough to coat the back of the spoon. This should take around two minutes. Let it cool to room temperature.
  5. Reserve about a quarter cup of the cornstarch mixture and set it aside.
  6. In a large bowl, mix together the soy sauce mixture and chicken. Marinate this for at least 30 minutes or if you have the time, overnight.
  7. In a large skillet placed over medium heat, heat the olive oil before adding the chicken. Cook it until the meat becomes golden brown in color. Set aside.
  8. Stir in the soba noodles and a quarter cup of cornstarch mixture until well combined.
  9. Serve immediately or garnish with sesame seeds, if desired.
