Recipe Recovery: Chicken Sausage and Bean Stew

What do you when you don’t have all the ingredients necessary to make your favorite dish?  You improvise and do what I call a Recipe Recovery.

Like many moms, I plan our week’s menu every Sunday and then restock our fridge and pantry with grocery items needed to complete our menu.  Usually, our fridge is full of garlic bulbs and Spanish onions because they are the key ingredients in so many of our favorite dishes.

With the weather being so cold here in Florida which is anything below 60 degrees (Hey, we’re spoiled!), soup is always on the menu.  One of my family’s favorite soups is Chicken Sausage and Bean Stew, which was introduced to me by Maris of In Good Taste.

But when I started to sauté my sausage for the soup, I realized there were no Spanish onions in my fridge.  I had forgotten to buy them this week.  Fortunately, I found a red onion and figured it would work and perhaps give the soup a new and interesting flavor.

When I served the soup to my family, everyone ate it happily as usual and no one was the wiser, except for Iron Chef Allan.  He knew something tasted different about it, but couldn’t put his finger (or tongue) on it.  He still enjoyed it, though.  The girls always eat their stew with grated Parmesan cheese and I believe the snowy mountain of Parmesan cheese masked my recipe recovery.

As for the recipe, I’ve modified Maris’ a bit since I first discovered it two years ago.  For one, I’ve omitted the marjoram because I don’t care for the taste of it.  I also prefer Al Fresco Sweet Italian Chicken Sausage because their products do not contain any MSG or nitrates.  These links are typically found in the hot dog section of your local supermarket.

Chicken Sausage and Bean Stew

Ingredients:
2 Cans Cannellini Beans
1 Package Al Fresco Sweet Italian Chicken Sausage
2 Tbsp Olive Oil (use more or less, depending on your pan)
1 Large Spanish Onion, chopped
4 Cloves Garlic, minced
1 (14.5 oz) can petite dice tomatoes with juice
1 tsp Oregano
2 cups Chicken Broth
salt and fresh ground black pepper to taste
1/4 cup chopped fresh basil
1 Tbsp Balsamic Vinegar
Fresh Grated Parmesan (optional)

Directions:

Place 2 cans cannellini beans into colander placed in the sink. Rinse well with cold water, until no more foam appears. Let drain.

While beans are draining cut sausage into half lengthwise, then cut into half-moon shaped slices. Heat olive oil in stock pot, then sauté sausage until well browned.   When sausage is well-browned, remove to bowl.  Add chopped onion to pot and sauté until onion is translucent and soft.  Then, add garlic and sauté with onions about 2 minutes more.

Add tomatoes and juice, dried oregano and chicken stock to pot with onions and garlic. Add sausage back to pot and cook at very low simmer for 30 minutes, until flavors are well blended.  After 30 minutes, add drained beans and simmer for 15 minutes more.

After the beans have simmered for 15 minutes, add chopped basil and balsamic vinegar and simmer for 5 minutes more.  Add salt and fresh ground black pepper as desired.

Serve stew with freshly grated Parmesan cheese if desired.

Random Thoughts About Running and Weight Loss

Janathon/JuneathonYou may have already heard me proclaim my desire to lose 40 lbs of baby weight before my 40th birthday this July.  You also may have already heard about me joining the Janathon.  Well, one week of the Janathon under my belt and I’ve already ran miles and lost 4 pounds!  WOOHOO!

 

Last week, I ran nearly every day.  I watched my food intake by reading the serving sizes on labels and I recorded my food with the help of a food/diet application from Sparkpeople.com as suggested by @BigBadEd and @jellisfl.  I also seriously cut back on the number of beers I drank last week.  Normally, I’ll drink one or two beers at night or a glass of wine, but this week I drank a total of FOUR.   I replaced the glass of wine I drank at dinner with a glass of water.

 

Who would have thought portion control, reducing my alcoholic consumption, drinking more water and increasing my activity level would have helped me lose weight?

 

It’s genius, I tell you!  My tweep and virtual running partner, @boutdrz suggested I brand this idea and sell it as a weight-loss program.  I could call the Florida 40 Diet.  I’ll make MILLIONS!  I’ll get to work on a prototype program ASAP.

 

I have to admit.  I love food and I run so I can eat as much food (within reason) as I want.  But until, my body slims down and my miles go up, I need to watch my caloric intake.

 

Portion control bites.

 

Moving on to something a bit tastier, here are my Janathon miles:

 

I set out Saturday to run 6 miles, but I didn’t start my run quite as early as I had hoped to.   As I set off at 9:30, I worried about running 6 miles as it’s been over a year since I ran that distance.  However, I truly impressed myself when I ran 2 miles without stopping.  Maybe it was the gorgeous weather or the wind, but the next 2 miles seemed to fly by as I looked down at my Garmin in disbelief.  I didn’t feel like I had run 4 miles yet.  Though I think I celebrated a bit too soon, because the next 2 miles were definitely the toughest.  But I did it.

Sunday, my legs were stiff and sore, so I decided to rest and recover with 50 minutes of yoga.  Later that day, my family and I strolled around the neighbor.  It felt good to move after the huge brunch we enjoyed earlier.  But not to worry! I only ate one helping of Allan’s sweaty brekkie because I didn’t want to undo all of last week’s efforts.

 

An ugly thunderstorm rolled in Monday morning, but I wouldn’t let that stop me.  Thankfully, I had arranged to meet some mommy friends at the gym for the first weigh-in of our annualBarbell rollout Weight Loss Challenge (a friendly weigh loss competition).  After the initial weigh-in, @jellisfl offered a core conditioning class but my body resisted.  My abs did not like the strain I put them through and decided to hurt me back.  As I wheeled the barbell out in front of me, my chin slammed into the wooden floor.  My abs suckered punched me. Now, I know why they call them dumbbells.   I won’t be repeating that exercise any time soon.

 

After the class, I set out to run 2 miles on the dreadmill.  I’m not a big fan of dreadmills, but with rain in the forecast, I was grateful to see it.  Honestly, with the slow pace that I run these days, the dreadmill wasn’t too bad.   But then, just after I finished my first mile, they paged me to the nursery.  Liam wanted his mama and that was the end of my running attempt for Monday.   The Gods just didn’t want me working out.

This morning, I woke up 5:00 a.m. to fit in 3 miles because I was NOT going to lose another day, not after I’ve been doing so well.  This time, I remembered my mace and a flashlight, but borrowed DH’s MP3 player since mine was dead.  I don’t know if it was his playlist or all the strength training, but something made me shave a minute off my time.

Sugarfoot

I have a confession.  I love Music Monday because it’s so much fun discovering what songs people connect with and why.  But also, this meme introduces or re-introduces me to music that I may have overlooked otherwise.  Since I’m always on a mission to find new songs or classic songs to add to my running playlist, this meme offers the means to do just that.  So, thank you for playing along and sharing the music that moves you.

Janathon Day 5, 6 and 7

Janathon/JuneathonFor Day 5, I decided to do some Boot Camp strength training stuff.  It’s been awhile since I’ve worked out with Sharon Mann and I think she punished me for it.  She made me do at least 1000 squats and lunges.  I could be off with that number, but from the way my legs felt afterwards that number is darn pretty close.

 

My muscles moaned with each uppercut I threw.  Each push-up and squat felt like slow torture.  Every so often, I had to stop and shake out my arms just to make it through the work-out.

 

My youngest daughter snacked on Clementines while she watched me work-out.  Whenever I stopped to shake out the soreness and rehydrate, my little Clementine coach yelled, “Mommy, break time is during the commercials.”

 

After a 45 minute boot camp bruising, I ran a mile with my girls while I pushed Little Lion Man in his stroller.  I believe that may have been just as torturous as the work-out beforehand.  Seriously, why did I think that was a good idea?

Day 6 was less eventful.  A thunderstorm rolled in the early morning hours, but it didn’t allow for any extra sleep because Little Lion Man slept poorly during the night, therefore I slept poorly.  On top of that, my allergies are kicking my ass.  With a sore throat and a sore body from the day before, I was in desperate need of some sleep.  Since I missed my window of opportunity to run in the morning, the rest of the day was shot and so are my chances of winning the Janathon.  No physical activity of Day 6.

 

Allergies and cranky babies totally bite.

 

I redeemed myself on Day 7.  Little Lion Man woke me up at 4:00 a.m. and I decided to stay awake.  I was not going to lose another day!  Once Little Lion Man drifted back to sleep, I quietly snuck out the door to run 3 miles.  Although I was beating myself up for missing a day during the Janathon, I believe my body needed the rest and thanked me for it with a decent run.

Gonna Make You Sweat

Every Boxing Day (the day after Christmas), Allan prepares a scrumptious breakfast (also known as a sweaty brekkie) with all the traditional British fixings: scrambled eggs,  potatoes, sausage, bacon, fried tomatoes, fried mushrooms and fried bread topped with Heinz baked beans.

 

Don’t you just love all the bubbly grease on the bacon?

 

 

Celebrating Boxing Day with a breakfast feast is our little way of looking for an excuse to carb load teaching our children the reason behind this holiday while embracing some British customs.  You can read more about our Boxing Day tradition here.

 

When Allan’s World Famous Boxing Day Sweaty Brekkie is plated and served, it looks like this.  A mimosa to wash it all down is my own flare added to the feast.

The F Word

As much as I love to drop the F-bomb, I am not referring to that F word.

Instead, I am referring to FORTY.

In 2010, I gained forty pounds due to my pregnancy and didn’t lose an ounce after I delivered baby #3.  How is that even possible? Naively (even after three babies), I thought that I would lose at least nine pounds at the delivery given that I passed an 8 lb, 10 oz butterball, but nope.  Somehow I dropped almost a nine pound baby and my body elected to carry a phantom baby in his place.

Forty seems to be a haunting reoccurring theme in 2011 too.  It looms behind every corner.  That dreaded F-word surrounds me as two of my closest friends and I are turning forty this year.

Funny, I don’t feel forty and I don’t think I look forty (Thanks to Demi Moore and other cougar mamas who made forty the new thirty), but the sound of it sends chills down my soon to be osteoporosis spine.  Am I really that old?

But before I hit the Big 4-0, these forty pounds have got to go, which leads me to two more F-Words: FAT and FIT.

I refuse to be fat at forty.  I will become a mom on the run again.  In 2011, I commit to being fit.

And to put my money where my mouth is (instead of food or beer for a change), I will compete in three half marathons (13.1 miles) in the next four months.  That’s close to forty miles just in races! (39.3 to be exact, but close enough)

Fourty.  There’s just no escaping it this year.  Fuck.

Janathon Day 3 and Day 4

Janathon/JuneathonBy Day 3, my legs started to complain about all this running I had put them through.  My hamstrings were sore and my shins felt tight, but I ignored all the pain and pounded out another 3 miles.

 

After the first mile, the tightness faded away and my pace picked up a bit.  In fact, I shaved almost 2 minutes off Day 2′s time!  Now, if only I could shave 40 lbs off my weight.

After a long weekend, Allan returned to work this morning, so my late morning runs would have to come to end.   Being so committed to the Janathon and bringing sexy back, I set the alarm for 5:00 a.m. to squeeze in a quick run before hubby woke up.

 

Then, around 3:00 a.m. the baby woke for a feeding.  As I fed him, Liam and I drifted back to sleep but shortly that 5:00 a.m. alarm startled me from my short slumber.  It took every ounce of energy I had in me to get out of that bed but I knew I would feel so much better once I got it over with rather than wondering when I would fit it in after hubby left for work.

 

It was now or never.  So, I grabbed my long sleeve Mickey marathon shirt for motivation and to comfort me from the cool, damp Florida morning and I headed out the door for my first early morning run in nearly a year and a half.

 

But, I forgot how dark the roads are at 5:30 a.m.  Note self: Lay mace next to MP3 player and Garmin charging in its cradle.

 

It’s so surreal running in the dark early morning hours.  Although street lamps light most of the way, the roads adjacent to the Cypress swamps are pitch black.  In those spooky pitch black spots, it feels as though I’m running in mid air because I can’t see the road ahead of me.  Note to self: Lay flashlight next to mace next to MP3 player and charging Garmin.

 

My body may need to get accustomed to running in the early morning hours again because I ran a little slower on Day 4 than Day 3.

Let’s Get It Started!

Last week for Music Monday, I asked everyone to share a song that represents what you anticipate 2011 to bring.  If 2011 had a theme song, what would yours be?

 

Mine would sound something like this…

With my commitment to the Janathon and refusing to be fat being fit at 40, there’s going to be a whole lot of running in my future.  Honestly, I am excited about turning because I don’t feel 40, but that could be that I’ve been 29 for 10 years now.

 

But mostly, I’m really looking forward to being a mom on the run again and bringing sexy back. After months of poor eating habits and an ass that looks like Christmas pudding, I’ve got my work cut out for me. This path to being fit at 40 is a really long ass road that’s been paved with chocolate bars and beer bottles.  But like any other road, it takes one step at a time to get through it.  And on that note…
