Pinning and Planning Our Dinner Menu – Week of July 19

With three back to back birthdays, the month of July feels a bit like the holidays in the Run DMT home due to the all the family gatherings planned to celebrate each birthday. Just as the confetti settles from one family birthday fiesta, there’s another one to organize and of course, another menu to plan. What will we serve to feed all these people?

To honor each birthday kid, we always serve the birthday kid’s favorite food. In the past for Liam’s birthday, we served Iron Chef Allan’s pizza. Emmalynn, my little vegetarian, loves cinnamon rolls for breakfast and lentil soup or mac cheese for dinner which we typically serve with grilled wings or burgers for the adults and/or meat eaters.

However for Emmalynn’s birthday this year, we decided to serve another of Emmalynn’s favorite vegetarian black beans and rice and Cuban Pulled Pork for the meat eaters. It seemed like the perfect meal to feed a crowd of big eaters and boy was it ever! That meal was a hit and for that, we’re serving it again for Liam’s birthday. And a big pot of pulled pork typically means enough leftover to make Cuban sandwiches. YUM!

Last week, my family and I took a road trip to Orlando and we ate at the House of Blues for the first time. I loved the NOLA feel and décor, but I found the Voodoo Shrimp spellbinding. What a yummy dish! I can’t wait to recreate a copy cat, lightened up version this week.

As for the rest of the week, the dinner menu looks equally magical.

Sunday – Sticky Asian-Style Ginger Grilled Wings with Asian-Style Broccoli Slaw

Meatless Monday – Grilled Veggie Hoagies

Tuesday – Lightened Up House of Blues Copy Cat Voodo Shrimp with white rice

Wednesday – Skinnytaste’s Mediterranean Chicken Kebab Salad

Thursday –  Cuban Pulled Roast Pork with Black Beans and Yellow Rice with Iron Chef Allan’s 1967 Salad

Friday – (Leftover) Pulled Pork Cuban Sandwiches

      That Voodo shrimp was AH-mazing! Can’t wait to dig into our lightened up version tonight. As for the “1967” salad, that is an Iron Chef Allan homage to the 1905 salad from the Columbia Restaurant. In his adaption, there is no meat and a combination of arugula and spinach. So basically a completely different salad with the 1905 dressing. The recipe is not on the blog just yet, but will soon be. Stay tuned! 🙂

    It’s birthday time for our family, too!! We just go out to dinner since we have no extended family around, just the 5 of us. We keep it pretty simple!

      My kids always pick Sweet Tomatoes for their birthday meals when we eat out, but hubby isn’t a fan. So, I take them at some point during the month of July on my own. I still haven’t decided my birthday meal! lol Happy birthdays, right back atcha babe! xox
