It was rough trying to eat healthy again. I made a batch of hummus this week to curb my temptation to eat Cheez-Its. It’s way too easy to dig into a box of those cheesy crackers. Now, instead of dipping my hand into the box, I dip a baby carrot in some fresh homemade hummus.
Every time I craved chocolate, I ate some grapes. It took a few weeks of holiday eating to get derailed off the healthy track, so it’s going to take some effort to get back on track again. Baby steps with baby carrots and grapes!
The other pitfall I’ve been facing is alcoholic beverages. I drink way too much wine and beer and my liver enzymes are a testament to that! With a marathon next weekend, I’m trying to drink more water and drink less alcohol to keep rehydrated and flush out the toxins.
And then, we went to Hooters last night and I had hot wings. See, every day is a struggle but today is a new day. Today and for the rest of the week, I will drink more water, drink less alcoholic beverages and try to eat better.
As our dinner menus goes in 2013, we’ll continue with Meatless Mondays every week. Since Publix (my local supermarket) has lots of veggies and fish on sale again this week, that will be easy to do. Last week, we ate leftovers for a couple of evenings, so a few of the pinned items carried over to this week’s menu.

T – Sautéed Tilapia with Lemon-Peppercorn Pan Sauce
W – Skinnytaste’s Broccoli and Cheese Stuffed Chicken with Mashed Cauliflower
Th – Stacked Roasted Vegetable Enchiladas
F – Pizza
S – Pre-Marathon Meetup Dinner at Pollo Campero at Downtown Disney

Thanks, Sweetie! The zucchini quesadilla is such a great dish. It’s easy and my whole family loves it.
I am with ya! My husband and I are working on eating more Paleo meals and cutting out quite a few things. I too, am munching veggies and fruits like crazy and aware that I need to drink a lot more water. I find oranges don’t go bad very fast and they are full of fiber and vitamin C. I love Greek yogurt and I made some frozen bananas to substitute for ice cream(it works!). The sucky thing is that I just started running more and that means I’m hungry more so it’s an ongoing process to try to keep from becoming ravenous!
