The next two weeks leading up to my long-awaited NYC marathon dream will be a NIGHTMARE. While my husband is off traveling for work this week, I have to be in four places at once between blogging functions, chaperoning a field trip, chauffeuring my kids to soccer practice and volleyball practice. Somewhere in between all of that I need to train for a marathon and plan a Halloween-themed trick-or-treating birthday party for my soon to be 13 year old.
Even for a marathon mom of the run, my life is truly INSANE right now.
At least planning simple, easy meals for my family brings me some normality and sanity as well as helping me eat healthy, well-balanced meals. And I am so grateful I put off purchasing any Halloween candy to avoid the snacking on sweets instead of healthy snacks.
Here’s our dinner menu for the week.
Sunday – Pepper Jack Salsa Verde Turkey Burgers
Meatless Monday – Roasted Broccoli and White Cheddar Quesadillas
Tuesday – Dinner and a show for Cinderella at the Straz
Wednesday – Skinnytaste’s Crock Pot Turkey White Bean Pumpkin Chili
Thursday – Lentils and Pasta
Friday – Pizza
Now that Fall is here, I am going to be utilizing my crock pot A LOT! I am also investing a a freezer so I can create make ahead meals.
This lentils and pasta dish looks right up my ally! Suppose there’s a way to do it in a crock pot without turning everything to mush?
I know I don’t have kids or a traveling hubby, but life is still busy! And meal planning is the one thing that helps me feel normal too. Its nice to have a bit of control over something and know I’m at least eating well 🙂 I;m so excited for tomorrow! We’re planning on quick Mexican at Lime Fresh beforehand 🙂
You are so right! I remember being wicked busy before kids too. I guess we are just gluttons for punishmen. lol Lime Fresh sounds yummy!
