This week’s dinner menu comes to you from the Big Apple. By the time you read this, I will be running through the streets of NYC living my NYC marathon dream.
My husband and my oldest, Allana, joined me for this NYC journey. In addition to the NYC marathon, we are also celebrating Allana’s 13th birthday in the Big Apple while our two youngest children are back home in Florida with Grandma.
We return home on late Monday evening but not before we soak up as much of NYC as we can. Allana compiled a list of 13 things she wants to do and we will definitely try and check off the items our teen’s NYC must do birthday requests.
But On Sunday, Allan and Allana will sightseeing and spectating the marathon while I explore 26.2 miles of five boroughs in my running shoes. Given my late marathon wave start time, I am expecting hunger to set in mid-marathon. For that reason, I plan to stash some cash in my running pant pockets to buy a dirty water street dog or soft pretzel. Rungry is no joke, my friends!
RUNGRY is a funny word I use to describe the intense hunger pangs I feel during a run or following a long distance run. During my recovery week after the Chicago Marathon, I felt like I was starving and couldn’t get enough food in me to satisfy the hunger. Hopefully, I can combat the runger this week post-NYC Marathon.
My marathon recovery and normal Florida routine will resume on Tuesday, which means our regular dinner meu begins on Tuesday this week.

Tuesday – Ground Turkey Tacos
Wednesday – Chicken and Chorizo Paella
Thursday – Copycat Chipotle Burrito Bowls with Cilantro Lime Rice
Friday – Brinner (Breakfast for dinner) Breakfast Skillets
