As I type this blog post, it’s pouring here in Florida. For the time being, the rain has brought some much needed cooler temperatures and the cooler weather combined with rain makes me crave warm bowls of soup and gooey grilled cheese sandwiches.
Iron chef Allan must have read my mind about bowls of heart goodness because he made a big batch of black beans and started simmering a slow-roasted mojo pork. Both of these dishes will make great leftovers and the thought of lovely, tasty leftovers brings images of gooey grilled cheese quesadillas dancing in my head.
A few months back, Allan tweaked his black bean recipe and began using dried beans instead of canned. I couldn’t believe how much better it tasted! Stay tuned for that recipe soon. It will be a winner-winner-Pinterest pinner! Trust me!
Since Allan is traveling this week, quick and easy meals and leftovers are a saving grace for me. Those black beans will make great leftover lunches for the kids as well as quick quesadillas. Yep, lots of leftovers in the week’s dinner menu.

Wednesday – Cuban Sandwich Quesdillas
Thursday – Black Bean Pepper Quack Quesadillas
Friday – Leftover Nachos

I cannot wait for the recipe as I have been trying to find a go to black bean recipe to use. I love black beans but I cant seem to get them right yet.
