In my Meatless Monday quest, I have been on the hunt for new and unusual vegetarian dishes, however having recently given up bad carbs, a “no pasta rule” narrows down the meatless options quite a bit.
Then, good ol’ Skinnytaste showed up on the Pinterest scene with her wonderful Quinoa and Spinach Patties. Like so many other Skinnytaste recipes, this one is simple and tasty. I modified the slightly recipe by adding a ¼ tsp of ground cayenne pepper (because I add cayenne pepper to everything) and I didn’t chop my scallions thin.
I also shortened the time I sautéed the patties in my electric griddle and finished them off in the oven for an added crispiness.
Of course, I loved how Skinnytaste served her Spinach and Quinoa Patty with a fried egg so I had to replicate that with some habanero hot sauce.
The base of these patties (quinoa, breadcrumbs and egg) is a wonderful foundation to a variety of other quinoa cake possibilities. My wheels and spoons are spinning with each bite and I can’t wait to test out new recipe ideas. Stay tuned for other varieties of quinoa cakes!
