The tagline “marathon mom on the run” is just a funny play on words anymore. Between traveling to Chicago, NYC and now, Washington D.C. in four weeks, I have become a jet-setting marathon mom on the run.
This weekend, I traveled to D.C. as part of the Good Food Force through MomsRising.org. It was an incredible opportunity to connect with like-minded moms, who are movers and shakers in their communities.
I learned so much and I am excited to share all the juicy information I learned with you all, but that’s another post. For now, this post will focus on the Good Food Force happening in my own home by way of our weekly dinner menu.
With all my traveling to places with real fall weather, my Florida body has gone into shock with the much cooler temperatures and as a result, I’ve been craving soup. With that, I asked Iron Chef Allan if we can bring back Soup Sunday and he was totally game. He even said that he would whip up a soup we haven’t had in a while.
Here’s what we’re dishing out for the rest of this week’s dinner menu.
Soup Sunday – Mediterranean White Bean Soup with Fresh Baked Bread and Greek Salad
Meatless Monday – Black Beans and Rice with Healthy Baked Plantains
Tuesday – Ground Turkey Tacos
Wednesday – Linguine Marinara with Chicken Sausage and Roasted Asparagus
Thursday – Broccoli and Cheddar Cheese Grilled Cheese Sandwiches
Friday – Pizza
