If you want to curb calories and carbs this Thanksgiving, mashed cauliflower is a wonderful carb free alternative to any dish that compliments mashed potatoes.
Mashed Cauliflower
Ingredients
1 lead head of cauliflower, washed and quartered
2 Tbsp Parmesan cheese
1 tbsp olive oil
Salt and pepper to taste
Directions
Rinse and cut cauliflower florets into quarters. Using a double-boiler steamer, steam cauliflower in ¼ cup of water (approximately an inch of water) until soft, about 10 minutes. (If no steamer, use a large saucepan with lid.)
Drain cauliflower but do not allow it cool. Using a food processor, blend olive oil, parmesan cheese, salt and pepper until smooth.
Serve as a side dish or family style in a large bowl.

I’ve been told by SO many people that mashed cauliflower is amazing. Do you think it would stay warm pretty good in a crock pot for Thanksgiving?
