Last week, I cherished reading feedback from readers who decided to take on menu planning this year. It was inspiring to learn how many people made their New Year’s resolution to plan weekly meals and I really hope each of you are able to make your resolution a reality and make healthy meal planning a habit. Please keep me posted on your menu planning progress.
This year, I took on a new hurdle: #40bagsin40 days. Basically, the challenge recommends focusing on one trouble spot in your home rather than entire rooms and fill a bag or box with items to throw out or donate. Although the decluttering challenge begins on the start of Lent, I decided to start the challenge on January 1 and I’ve been a decluttering domestic goddess every day since then.
So far, I’ve tackled linen closets, cupboards, a bookcase and today’s trouble spot was our entertainment cabinet. With focusing on one target area a day, the task becomes very manageable and quite therapeutic. Plus, it’s heart-warming that our gently-used items can bring pleasure to another person.
So, if you’ve got the meal planning down, take on the decluttering challenge with me too. Learn more about the 40 Bags in 40 Days Challenge here. But maybe, like the challenge suggests, it’s best to tackle one task at a time.
With that, let’s stick to the task at hand. Here is this week’s dinner menu.
Sunday – Sticky Ginger Asian-Style Grilled Butterflied Chicken with Asian-Style Broccoli Slaw
Meatless Monday – Caprese Paninis and Tomato Soup
Tuesday – Baked Potatoes with White Cheddar, Roasted Broccoli and Chopped Bacon
Wednesday – Skinnytaste’s Chicken Tikka Masala
