Pinning and Planning Our Dinner Menu – Week of January 25

The first month of 2015 is coming to a close. It’s hard to believe we are into the second month of the year already. As January winds down, kick off to Super Bowl Sunday is a week away and then we fumble into February.

I love February for all the foodie related themes, such as Chinese New Year and Fat Tuesday (or Pancake Day in our house). I’m working up an appetite just thinking about it! Stay tuned for a post spotlighting my favorite Chinese New Year dishes and NOLA-inspired Mardi Gras meals.

The experts say it takes 30 days to create a habit and I’ve done a good job eliminating the white noise in my life and focusing on what’s important. I think I’ve managed to find that coveting balance I’m always craving by planning my week properly, prioritizing, staying focused and putting my family first above everything else.

Little Lion Man begins T-ball this week. He is so excited and I can’t wait to see him run the bases like a big boy! While we adjust to a new after-school activity added to our schedule, I’m planning quick and easy hearty meals, like casseroles or a slow cooker dinner.

Here is our dinner menu for the week:

Sunday – Buffalo Grilled Wings with Spaghetti Salad

Meatless Monday – (Tampa Bay Bloggers Event at Ulele) Broccoli and Cheese Baked Potatoes for the family

Tuesday – Mojo Roasted Chicken with Mashed Cauliflower and Zoodles (Zucchini Noodles)

Wednesday –  Baked Ziti with a Mixed Greens Salad

Thursday – Brinner (Breakfast for Dinner) – Eggie Veggie Potato Skillets

Friday – Pizza

    My superbowl menu is blank at the moment. It’s more for my husband and kids so I need to find out what they’re in the mood for this year.
