It’s the last homestretch until Christmas. We’ve finished our shopping and our baking. Now all that is left is just piles of gift to wrap and Christmas cards to mail.
The weather cooled down this weekend which offered the perfect opportunity for us to take our Christmas card photos. Since Iron Chef Allan requested an Ugly Christmas Sweater Christmas, we decided to wear our ugly Christmas sweaters for this year’s family photo.
All I needed was the one good shot for a Christmas card. Thankfully, we snapped a few good ones. See a few of my other favorites from our ugly Christmas sweaters photos here.
Now to mail the cards off in time for Christmas! Thank goodness for one-hour photo service!
Apart from wrapping presents and mailing cards, all that’s left is the Christmas menu and thank goodness! That’s been planned. Christmas Eve is typically a traditional Italian dinner per my mom’s request. Our Christmas Eve menu was once a meatless menu, but over the years Iron Chef Allan began sneaking in meat dishes such as links of grilled sausage to accompany the pasta or breaded chicken cutlets to turn the Eggplant Parmesan a Sorrentino type dish.
While the eggplant parmesan is still the main entrée, now many of the side dishes include some type of Italian meat, including my Antipasto Skewers as an appetizer. Since Iron Chef Allan’s pizza is always a hit, he thought he would give Stromboli a go. He also wanted to try his hand at Braciole, another one of my family’s favorite Italian dishes. My mom makes this every year for Christmas Day and we thought we’d roll with it. 😉
With Christmas Eve and Christmas Day meals being on the heavier side of things, the rest of our meals this week will be on the lighter side. With that, here’s this week’s dinner menu and our complete Christmas dinner menus.
Sunday – Grilled Mojo Chicken with Roasted Asparagus and Unfried Parmesan Fries
Meatless Monday – Tomato Soup with Grilled Cheese Sandwiches
Tuesday – Mojo Butterflied Grilled Chicken with Roasted Asparagus and Unfried Parmesan Steak Fries
