How is everyone surviving the Great Blizzard of 2016? Are you in front of the fireplace hugging a worm bowl of soup?
Things are a bit chilly and windy here in Florida as well and while we may not be blanketed in snow, the cooler weather has me craving stews and warm oven casseroles. It’s definitely a delcious time to bring back Soup Sunday again!
Can I be the only one to think soups and casseroles are perfectly cooler weather comfort food? Done right, soups and stew serve up a warm bowl of hearty, healthy goodness. Served with a side salad and some crusty bread and all the food groups are present for a well-balanced meal.
Inspired by the wintery artic blast of wind this weekend, I’ve added a few of our piping hot and steamy soups back into the dinner menu rotation this week and a new one I’d like try, Skinnytaste’s Turkey Meatball Spinach Tortellini Soup.
Much like soups, I find casseroles to be comfort food. Last week, I gave a hug and comfort in pan to a mom friend of four young children. With no history of breast cancer, my friend underwent a double mastectomy which will be followed by an intensive chemo schedule for the next six months.
My heart just breaks for her and the least I could do was cook her family a meal. While my Marsala Chicken and Mushroom Casserole isn’t much, I hope the casserole offered a little comfort to her family. Since my family loves this casserole, I doubled up and made an extra pan of comfort for my family.
When planning this week’s dinner menu, my youngest daughter requested Baked Ziti, another winning recipe with my family. It seems that the cooler weather has her craving a casserole of comfort food too.
