I love Mexican food. Truth be told, I just love food, but toss in a holiday that focuses on food and I’m happier than Mariachi Band on Cinco de Mayo.
With Cinco de Mayo falling on a Monday this year, it really put a thorny cactus in my Meatless Monday plans. How can I not eat meat on Cinco de Mayo?!
Since I’ve committed to the whole “Meatless Monday” idea, I solemnly swear to not eat meat today, however, I will splurge with a some shrimp although I can’t quite make the same promise for my family. In fact, they have already requested tacos tonight. I’ll drown my family’s carnivorous guilt with one of Iron Chef Allan’s absolutely delicious margaritas.
